Thanksgiving Vegetable and Pasta Side Dish Recipe

This recipe is not only tasty but also works well with different types of main dishes. The ingredients are easily accessible. The vegetables add lots of color and texture to the dish as well.

I also love this recipe because you can add as many or as few of the vegetables as you like or have at the moment. If for example, you don’t like the olives, you can do away with them completely and still end up with a great-tasting side dish.

Ingredients:

1 box rice pasta or brown pasta

4 cups broccoli florets

2 chopped ripe avocados

½ cup roasted red peppers, halved and sliced

½ cup pitted and diced Kalamata olives

½ cup sunflower seeds

1 lemon, juiced

¼ cup extra virgin olive oil

Sea salt to taste

Freshly ground black pepper to taste

How To Cook Vegetable Thanksgiving Side Dish

Fill a medium saucepan with cold water and put it on high heat until it comes to a boil. Add the broccoli florets to the boiling water and let them cook until they turn a bright shade of green. Drain them and keep them aside.

Take a large bowl and add in the cooked broccoli, lemon juice, olive oil, salt, pepper, roasted red peppers, and avocado slices. Gently mix together until everything is well combined. Add more salt or lemon juice if needed.

Cook the pasta according to the instructions on the box. Drain the boiled pasta and put it in a serving bowl or tray. Top with some pesto sauce or just toss with some pesto sauce until everything is well coated. Serve hot.
