Thanksgiving Vegetable and Pasta Side Dish Recipe

  • 1 box rice pasta orbrown pasta
  • 4 cup broccoliflorets
  • 2 chopped ripeavocados
  • ½ cup roastedred peppers, halved and sliced
  • ½ cup pitted anddiced Kalamata olives
  • ½ cup sunflowerseeds
  • 1 lemon,juiced
  • ¼ cup extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper


  • Fill amedium saucepan with cold water and put it on high heat until it comes to aboil. Add the broccoli florets to the boiling water and let them cook untilthey turn a bright shade of green. Drain them and keep them aside.
  • Take a largebowl and add in the cooked broccoli, lemon juice, olive oil, salt, pepper,roasted red peppers, and avocado slices. Gently mix together until everythingis well combined. Add more salt or lemon juice if needed.
  • Cook the rice pasta according to the instructions on the box. Drain theboiled pasta and put it in a serving bowl or tray. Top with some pesto sauce orjust toss with some pesto sauce until everything is well coated. Serve hot.


For the alternative ingredients and substitutes, you can use any kind of pasta that you like. You can also add more veggies like roasted cherry tomatoes, artichokes, olives, etc.
