In a smallsaucepan over medium heat, combine the butter with onion and lemon juice and simmeruntil the onion is tender.
Remove fromheat and stir in fresh herbs and season with pepper and salt to taste.
On a largetray, arrange fillets and stuff with the onion mixture. Top with lemon wedgesand any remaining herb mixture.
Bake forabout 20 minutes in the preheated oven, until fish flakes easily when testedwith a fork. Serve hot with fresh tomato salsa.
Notes
You can adjust the cooking period depending on the thickness of your fillet. Also, serve your fillets immediately or soon after cooking to get the best flavor.
